The potato has long been a staple of the Irish diet. Here, Biddy White Lennon gathers together some of the best recipes based on the humble potato. With flavours ranging from sweet to spicy, savoury to sumptuous, Biddy brings out the best in this versatile vegetable.
Choose from traditional colcannon or the brunch favourite -- boxty, surprisingly light potato bread and scones, warm potato salad, or potato dumplings. Whether you like your potatoes floury or waxed, baked, roast or mashed, you will find a recipe here to suit your taste.
Biddy White Lennon was a noted cook and personality, familiar to many people as Maggie from The Riordans. She was a founder member and Chairwoman of the Irish Food Writers Guild as well as editor and food writer of Irish Home Diary and wrote regularly for Food and Wine Magazine.
As a judge on The Great Irish Bake-Off, Biddy displayed her passion for great food that can be cooked by ordinary people in their own homes. Biddy died in 2017.
Three well-planned and pleasant little resources for the kitchen, all helpfully devoting one page to each recipe, with a background note, ingredients and method ... substantial collections of good recipes to which you will find yourself turning much more often than to the extravagant and showy cookbooks with their glistening colour photos and stylish spoofery.
